Discover Nagasaki Flavors Through a New Dining Experience
From Sashimi to Shabu-Shabu. A New Culinary Culture from Nagasaki: “Nagasaki Sashishabu”
Blessed with an abundance of fresh seafood, Nagasaki has long been shaped by the bounty of its surrounding seas.
“Nagasaki Sashishabu” is a new culinary concept proposed by Nagasaki City, offering a new way to enjoy the flavors of the region’s seafood.
At Hotel Indigo Nagasaki Glover Street, we have added our own interpretation inspired by Nagasaki’s unique blend of Japanese, Chinese, and Dutch culinary cultures. From seasonal seafood and traditional tableware to the preparation of the broth and the final course, every element comes together to create a dining experience that reflects the culture of Nagasaki.
NAGASAKI SASHISHABU
Seasonal seafood caught in the waters around Nagasaki is served on Mikawachi ware, a traditional porcelain craft that flourished under the patronage of the Hirado Domain. Begin by enjoying the seafood as sashimi, savoring its natural flavor and texture.
Next, a fragrant broth is prepared before you using a siphon, combining flying fish stock with dried shiitake mushrooms from Unzen and dried porcini mushrooms. Lightly dip the seafood into the warm, aromatic broth to discover a different depth of flavor, aroma, and texture from the sashimi.
To finish, a grilled cheese rice ball is paired with the broth, now enriched with the flavors of the seafood, and served risotto-style so you can savor every last drop.
From sashimi to shabu-shabu and the final course, enjoy “Nagasaki Sashishabu” — a dining experience that brings together the bounty of Nagasaki’s seas and its culinary traditions through all five senses.
