A Summer Dinner Where Japanese, Chinese, and Dutch Influences Harmonize with the Flavors of Nagasaki

“SIGNATURE COURSE – BLANCHE –” showcases seasonal seafood and fresh vegetables from Nagasaki,
thoughtfully crafted to express the unique character of the city where Japanese, Chinese, and Dutch cultures harmoniously intertwine.
Enjoy the rich culinary heritage of Nagasaki in a former chapel transformed into a restaurant space,
distinguished by soaring 10-meter ceilings and dazzling stained glass windows.

SIGNATURE COURSE –BLANCHE–

The course begins with smoked Nagasaki squid paired with a salsa sauce accented by local yuzu kosho in place of chili pepper,
expressing the vibrant cultural influences that have shaped Nagasaki.
Guests can also enjoy mashed “Jagatara potatoes,” said to have been brought from Jakarta to Nagasaki by the Dutch in the 1600s,
served with fried Nagasaki kibinago sardines inspired by the city’s rich culinary history.
For the fish course, Nagasaki’s local specialty “Hikado,” rooted in Portuguese cuisine, is reimagined with a contemporary touch.
To finish the savory courses, rice cooked with loquat tea is paired with white miso-marinated sea bass and served as an ago-dashi ochazuke.
Dessert features a modern interpretation of Nagasaki’s iconic milkshake, offering a gentle sweetness with a nostalgic touch.
