The restaurant’s signature course, Blanche, incorporates ingredients from the neighbourhood, such as seasonal seafood, Nagasaki Wagyu beef, and citrus fruit. Bringing together Nagasaki’s food culture and influences from other cultures, this special dinner course offers a variety of dishes that reflect the chef’s delightful creativity.
For the appetizer, you can try kelp marinated tiger pufferfish, caught in Nagasaki, which is served with a Japanese-style sauce made from Nagasaki’s traditional citrus fruits. The fish dish puts a Chinese twist on cotriade, the speciality of the Brittany region of France, using plenty of seafood from Nagasaki Prefecture and fish sauce. For the meat dish, bite into a Nagasaki Wagyu beef pie bun, served with a red wine sauce fragrant with five-spice powder, a Chinese spice. Then, for dessert, enjoy the rare citrus sweet spring brulée, which is characterised by a refreshing sweetness.
In our beautiful chapel restaurant, with its gleaming stained glass windows, take a moment to relish the different flavours of the Nagasaki neighborhood, at the intersection of different cultures.

SIGNATURE COCKTAIL YUKOH

The signature cocktail, Yukoh, is a craft gin made with local camellia nuts, and flavored with yūkō, a fruit unique to Nagasaki. Its refreshing citrus aroma and tangy flavor pair perfectly with the signature dinner course.
