A Spring-Only Dinner Menu Featuring Seasonal Ingredients from Nagasaki, Enhanced with Japanese, Chinese, and Dutch Influences.

This special course celebrates the essence of Nagasaki through a fusion of cultures, incorporating the finest summer seafood and seasonal vegetables from Nagasaki, infused with Wa-Ka-Ran mix culture influences.
Enjoy this culinary journey in a cathedral-style restaurant adorned with shimmering stained glass and soaring 10–meter–high ceilings – a truly unique setting where the rich food culture of Nagasaki meets the charm of international heritage.

For the appetizer, enjoy a colorful plate inspired by Nagasaki’s historic Wakaran culture, featuring tiger prawn gently poached in jasmine tea and wrapped in Unzen prosciutto, fish flan topped with caviar, and a strawberry and cream cheese canape.
The fish course presents Nagasaki hirasu and salmon carpaccio layered with transparent soy gelee, followed by spanish mackerel and white fish mousse baked in crepine with a refreshing Nagasaki mandarin butter sauce. The main dish highlights roasted domestic beef fillet paired with a rich fermented black bean sauce.
To finish, savor an onigiri of Nagasaki sea bream served as fragrant ago-dashi ochazuke, before concluding with mango pudding and almond tofu espuma accented by bright Shiranui citrus.
This six-course menu celebrates the gifts of sea and land, reflecting the cultural crossroads that define Nagasaki from spring to early summer.
